2# Herb Rubbed Salmon Herb
1 Mushroom Sauce
Let’s Eat!: Preheat your oven to 425*f. Once your oven is preheated, place the foil tray (remove the lid) with the Salmon onto the center rack & cook for 20 minutes. You’re looking for a nice roasted salmon color, and *if using a thermometer* the thickest part of the filet should read 155*. If not, no worries, just look for the flesh to be firm when you give it a push or alternatively you can cut a slice into the thickest part of the filet & see the center has become slightly opaque in color. Mushroom Sauce: Remove lid from container, toss into the microwave and heat on high for thirty seconds. Remove and stir, continue this process until the sauce is hot. This should take about 3-4 minutes. Enjoy in the foil pan or your Favorite Serving Dish.
FARMHOUSE SALAD
Ready In: 3 min.
1 Baby Arugula
1 Shaved Red Onions
1 Toasted Almonds
1 Winter Citrus
1 Chives
1 Dijon Vinaigrette
Let’s Eat!: In a tin foil pan, combine all ingredients & mix well. *note* Use as much dressing as desired, heck even put it off on the side if guests would rather add it themselves. Enjoy in the foil pan or your Favorite Serving Dish.
DELICATA SQUASH
Ready In: 20 min.
1 Pan of Squash
6 oz Brown Butter Vinaigrette
6 oz Agro-Dolce
Fried Squash leaves
Let’s Eat!: Preheat your oven to 425*f. Once preheated, place the pan of Squash with the lid removed into the oven. Let cook for 15-20 minutes, at this point the Squash should have gotten some roasted color & begin to blister. Once the Squash has become beautifully Roasted with nice caramelization, remove from the oven. In the foil pan, add the Agro-Dolce and coat the squash completely. Dress with the sage leaves & brown butter vinaigrette. Enjoy in the foil pan or your Favorite Serving Dish.
ROASTED HEN
Ready In: 30 min.
1 1.5# Chicken, spatchcocked
6 oz Balsamic Vinaigrette
Chopped Onions (in pan with chicken)
Let’s Eat!: Preheat your oven to 425*f. Once your oven is preheated, place the foil tray (remove the lid) with the Chicken onto the center rack & cook for 20 minutes. You’re looking for a nice roasted salmon color, and *if using a thermometer* the thickest part of the THIGH should read 160*. or alternatively you can cut a slice into the thickest part of the Thigh, see the center has become opaque in color & juices run clear. Remove from the oven allow to rest for 10 minutes & dress with Balsamic Vinaigrette. Enjoy in the foil pan or your Favorite Serving Dish.
WORLD FAMOUS SHRIMP TRAY

1 Shrimp Tray, uncooked in foil pan
1 Tray Seasoning Sauce (6 oz)
1 Garlic Bread
Let’s Eat!: Preheat your oven to 425*f. Once your oven is preheated, place the foil tray with lid on the center rack and cook for 8 minutes. After 8 minutes, remove the lid and cook for an additional 3-5 minutes. At this time lay the garlic bread open on the center rack next to the tray and allow this to cook & become golden brown. You’re looking for your Shrimp to be nice plump & orange, the vegetables to have softened and be cooked. Remove everything from the oven & dress Tray with Tray Seasoning Sauce & mix well. Enjoy in the foil pan or transfer to your Favorite Serving Dish.
